Today, I bring you a nutritious and delicious recipe with Portobello Mushrooms.

Portobello Spinach Pizza!

 

 

Introduction

This is a delicious take on pizza!

Low calories and super nutritious than traditional pizza crust.

Servings: 1

Serving Size: one large mushroom

Prep Time: 5 minutes

Cook Time: 15 - 22 minutes

 

 

Ingredients

4 large Portobello mushroom caps

2 Cups of Fresh Spinach cut up

2 Tablespoons Olive Oil

2 Cloves of minced garlic

1 teaspoon Salt &  1 teaspoon of pepper

2 Cups of Muir Glen Organic Tomato Sauce with Basil divided into four -  ¼ cups.    Muir Glen Brand is in most of your major supermarkets in the Tomato Sauce      aisle.

½ Cup Low Fat Mozzarella cheese

½ Cup Diaya Cheese -  In the dairy refrigerator section of your grocery store or Whole Foods, Sprouts, etc.

¼ Cup Grated Parmesan Cheese

Optional – Veggies of your choice!

 

Directions

 

  1. Preheat oven to 375 degrees F.
  2. Clean mushrooms with a damp paper towel.
  3. Using a spoon, gently scrape out the gills from the inside of the cap. Gently go against the pattern of the gills and scrape with a spoon. The gills will come out easily. You don’t have to remove every inch of The gills – just the majority of them. The gills have a strong, earthy taste to them and for this recipe, the pizza will taste better without them.
  1. Mix together olive oil, garlic, salt and pepper.
  2. Rub both sides of the mushrooms with the mixture and then place each mushroom on a foil lined baking sheet.
  3. Bake with the visible hole in the cap of the mushroom side up for 10 minutes.
  4. Take the mushrooms out of the oven and turn the temperature up to 450 degrees F.
  5. Wait 1-2 minutes and then dry the outside of the mushrooms off with paper towel as much as possible.
  6. Take ½ cup of Muir Glen tomato sauce per mushroom & spread inside each mushroom.
  7. Divide the Spinach into 4 servings and place 1 serving on top of the sauce in each mushroom.
  8. Mix the mozzarella cheese & Diaya cheese together in a bowl.
  9. Measure out four – ¼ cup servings
  10. Sprinkle ¼ Cup serving of cheese inside each mushroom.
  11. Sprinkle grated cheese inside each mushroom and place them back in the oven for 7-10 minutes or until the cheese melts.
  12. Let cool 5-10 minutes and enjoy!
